Details: Also known as yuba or fu zhu, these dried bean curd sticks are the skin that forms on simmering soy milk, lifted off and dried. Three ingredients only — soybeans, water, and salt. Once rehydrated they hold their shape in the pot and stay pleasantly chewy while carrying the flavor of whatever they are cooked in. A staple protein for hot pot and home-style braises.
Preparation Instructions:
- Soak in cool or warm water for 2–3 hours (or 30 minutes in hot water), until fully soft all the way through;
- Rinse, drain, and cut into 2-inch lengths;
- Simmer in hot pot broth for 3–5 minutes, or braise, stir-fry, or dress cold with chili oil and vinegar.
Great With: Mushroom or spicy hot pot broth, braised pork, dry pot dishes, and cold appetizer platters.
