HAIDILAO Hot Pot Dipping Oil, 3.17 oz
The Sichuan Oil Dish — Six Ingredients, One Very Big Difference
Details: Walk into any Chengdu hot pot restaurant and the default dipping bowl is not sesame paste — it is you die: sesame oil with garlic and scallion stirred into it. Its job is not to add flavor so much as to cool what you just pulled out of a boiling mala pot, and to keep the spice from stripping your palate between bites. Six ingredients, nothing else. If you have only ever dipped in sesame paste, this is the one to try next.
How to Use:
- Empty one packet into a dipping bowl;
- Stir in minced garlic — traditionally a lot of it — plus scallion, cilantro, and a pinch of salt or oyster sauce;
- Dip hot ingredients straight from the pot. The oil cools them and carries the broth's flavor without competing with it.
Best With: Spicy and mala broths, where it does the most work. Also good for drizzling over cold noodles, blanched greens, or steamed fish.
