Shanghai's Borscht — Tomato, Butter, and Not a Chili in Sight

Details: Russian borscht arrived in Shanghai a century ago and came out the other side as luo song tang: tomato-forward instead of beet-forward, thickened, a little sweet, finished with butter. This packet is that version — tomato paste cooked down with onion, celery, carrot, garlic, sweet paprika, thyme, and bay leaf. Completely non-spicy. Use it as a hot pot broth, or just heat it with water and beef for a weeknight soup.

Preparation Instructions:

1. Bring about 1000ml of water (4 cups) to a boil;
2. Add the packet and stir until dissolved, then simmer 5 minutes;
3. Add your ingredients and cook through. For a thicker soup, use less water and simmer longer.

Great With: Beef brisket or chuck, cabbage, potato, carrot, onion, tomato, and a spoonful of sour cream on top. As a hot pot broth it also works well with sausage, meatballs, and pasta.

How to Store: Keep unopened in a cool, dry place away from direct sunlight. After opening, consume immediately or refrigerate and use within a few days.
