Details: Same Chengdu street-food format as our Red Oil Boboji, different personality. Rattan pepper (green Sichuan peppercorn) oil leads with a bright, almost citrusy aroma and that signature tingling numbness, with far less chili heat behind it. Two complete sets — six packets in all — so one box seasons roughly 6 lbs of ingredients. You boil your own ingredients, then let them steep.
What's Inside: 2 × Rattan Pepper Oil (100g each) · 2 × Seasoning Powder (45g each) · 2 × Toasted Sesame (15g each)
Preparation Instructions:
- Boil or blanch your ingredients until just cooked — thinly sliced chicken, shrimp, quail eggs, lotus root, potato, mushrooms, tofu skin, leafy greens — then thread onto skewers;
- In a deep bowl, combine one Rattan Pepper Oil packet, one Seasoning Powder packet, and about 2 cups (500ml) of the cooking liquid or plain water; stir until dissolved;
- Submerge the skewers and steep for 10–20 minutes. Serve warm, or chill in the refrigerator and serve cold;
- Sprinkle with the sesame packet before serving.
Great With: Poached chicken, shrimp, quail eggs, lotus root, potato slices, enoki and shiitake mushrooms, tofu skin, bok choy, and cold noodles.
