Hainan's Sour-and-Savory Hot Pot — Bright, Tangy, Nothing Like Mala

Details: Zao Po Cu is a specialty of Hainan Island, and it tastes like nowhere else in China. The base is sweet fermented glutinous rice and white sour soup, aged into a broth that is tart, gently sweet, and deeply savory all at once — closer in spirit to Thai tom yum than to Sichuan hot pot. Locals build it around seafood, and one packet makes a full pot. If you want a hot pot night that is refreshing rather than fiery, start here.

Preparation Instructions:

1. Empty the packet into your pot;
2. Add water at a 1:3 ratio — 320g of soup base to about 960ml (4 cups) of water. Use less water for a sharper, more concentrated broth;
3. Bring to a boil, then reduce to a simmer;
4. Add your ingredients and cook through. The broth is also excellent on its own as a sipping soup.

Great With: Shrimp, clams, squid, white fish, sliced pork belly, beef, fish balls, tofu, glass noodles, enoki mushrooms, and plenty of leafy greens.

How to Store: Keep in a cool, dry place away from direct sunlight. After opening, consume immediately. DO NOT eat if the packet has expanded, has an off odor, or is damaged.
