Southeast Asian Curry, Rounded Out With Real Coconut and Butter
Details: A curry broth built for hot pot rather than for rice. Curry powder and turmeric give it the color and warmth; pure coconut powder, butter, and milk powder soften the edges; and a little dried shrimp powder adds the savory depth that makes you keep going back to the pot. Preparation Instructions:
- Bring 1000–1200ml of water (about 4–5 cups) to a boil;
- Add the entire packet and stir until dissolved, then simmer 5 minutes;
- Add your ingredients and cook through. Use less water for a thicker, more curry-like broth.
Great With: Chicken thigh, shrimp, fish balls, potato, sweet potato, carrot, cauliflower, tofu puffs, and udon or rice noodles at the end. Serve steamed rice alongside to soak up the broth.
