Details: Sichuan boiled pork slices look violent and taste luxurious: paper-thin pork poached in a chili-and-bean-paste broth, then buried under dried chilies and Sichuan peppercorns and finished with a ladle of smoking hot oil. The hard part at home is the texture of the meat — which is why this kit includes a separate marinating packet with sweet potato starch and papain that velvets the pork the way a restaurant would. Three packets, about 20 minutes, one very good dish.

Preparation Instructions:

1. Slice about 1 lb (450g) of pork loin or shoulder paper-thin. Toss with the marinating packet and a splash of water; rest 10 minutes;
2. Blanch napa cabbage, bean sprouts, or lettuce and lay them in a deep serving bowl;
3. Heat 2 tablespoons of oil, fry the seasoning paste packet 1 minute, add about 3 cups (700ml) of water and bring to a boil;
4. Slide in the marinated pork slice by slice; simmer 2–3 minutes until just cooked, then pour everything over the vegetables;
5. Scatter the dry chili and peppercorn packet on top, heat 3 tablespoons of oil until smoking, and pour it over. Serve immediately with rice.

Also Works With: Beef, fish fillet, shrimp, or firm tofu in place of pork.
